As a kid, one of my favorite things to do was to go with my dad and my grandfather down to the lake and do a little fishing.  We would bring home our catfish catch of the day, and my mother and grandmother would fry them up and serve them with cole slaw, corn-on-the-cob and hush puppies (or fritters).  It made for a very fun day, and we usually did this about 5-6 times every year, mostly in the summer.  Most people think of catfish as a detestable, bottom-feeder in the fish-hierarchy, but this link will hopefully sway (popular) opinion on this tasty fish: http://whatscookingamerica.net/Seafood/FriedCatfish.htm

Salad is often the first thing people think of when they’re trying to cut down on calories and eat healthy. It’s a good instinct - salads made with leafy greens and other veggies are packed with important nutrients and health protection. The problem is when those salads get dressed.
